In 2021, Mr. Yasushi Sugiyama, a top chef who became independent from a famous long-established sushi restaurant in a place called Iwanai, a fishing town facing the Sea of Japan, and his wife started a "Minotake ryouriten". This is an up-and-coming restaurant that has grown into a restaurant that cannot be booked in less than a year since it opened. Its popularity is not limited to this area, and now customers from outside of Hokkaido visit the minotake restaurant. The owner, Mr. Sugiyama, is well versed in art, and the dishes he serves are enjoyed by many people regardless of nationality or age, as they can be enjoyed with all five senses.
