Keisuke Sugiyama
Born in Iwanai Town, Hokkaido, he inherited the craft of sushi from his father, a distinguished sushi chef. Despite facing tremendous challenges, including the devastating fire of 1954 that destroyed 80% of the town, the restaurant rose from the ashes, earning deep affection from locals and becoming a beloved institution.
As the sushi chef and CEO of Sei Sushi, a legacy passed down through generations, he continues to pursue perfection, unwavering in his commitment to using only the finest ingredients. The premier Course, in particular, reflects his dedication to excellence, as it features the highest quality ingredients sourced daily from the best suppliers in Japan. On this course, he selects only the most exceptional ingredients available on that day, ensuring a truly unparalleled dining experience.
